Ethanol
About three billion gallons of ethanol are now produced annually in the United States, using about 10% of the U. S. corn crop. About 30% of the gasoline presently used in the U. S. is blended with ethanol. The corn is ground to expose the starch. Wet-milling is a process which soaks the corn in water, grinds the wet corn into a slurry, separating the starch from the gluten (protein) in a centrifuge, and then fermenting to turn the sugars into alcohol. In the dry-milling process, the corn is ground and then water and an enzyme are added, the "mash" is cooked and then fermented. The alcohol manufacture uses only the starches, so the minerals, fats, proteins, and vitamins are left in the "distiller's dried grains" byproduct.
